Tribune. The law agriculture and food voted sets ambitious objectives for the restaurants of community. By 2022, 50 % of our plates be made up of quality products, and fair, with 20 % coming from organic agriculture. We, restorers collective, representatives of the local authorities, elected representatives and associations involved in the food projects, support these objectives.

Behind, the stakes are enormous : access to all and all a balanced meal and healthy through the day, the motivation of our personal the kitchen, the dynamism, the relationship with our territories and our producers… With three billion meals served each year, a billion to nothing in school catering, we have well understood the tremendous economic leverage, ecological and public health that represents this sector. And if it is true that more and more restaurants collective commitment, let us not deceive ourselves, they are still pioneers.
The conclusion is without appeal : in spite of the ambitions of state displayed for years, the share of bio used in our restaurants do not take off. Only 3% of the products served in schools, hospitals, businesses, long-term care facilities are from organic farming. The market is still very high and we only have four years in front of us.
The local authorities were the first to support the deployment of projects. But without financial support, our efforts will not be sufficient to meet this challenge across the country. We are therefore asking the State to contribute its fair share to the success of the deployment of a catering more responsible. We can’t take the risk to fail collectively.
